This is actually my favorite meatless meal. My husband loves pinto beans. I like soup and grilled cheese sandwiches. I will tell you how I make my veggie soup to go with grilled cheese. I think I really like because not only do I like soup and sandwiches but it is pretty fast to make. You don't have to plan ahead. There is little clean up and it is very filling.
First thing I do is put a tiny bit of olive oil in the pan just maybe a teaspoon and heat it up to medium. Throw in some garlic and let that get nice and translucent. I also put in Oregano at that time. Then I open a can of diced tomatoes. Throw that in. Season with salt, pepper, red pepper and whatever else looks good. Then I put some frozen vegetables in the microwave for a couple of minutes to unfreeze them. Then I dice them up because the veggies I buy just are chunky rather then really diced. So I add those veggies usually broccoli, cauliflower, and baby carrots. Then I fill the pot up with chicken broth until everything is covered plus a little room. Then I start making the grilled cheese sandwiches. I really like using garlic bread, and two kinds of cheese. I like cheddar and low fat mozzarella. Watch the soup and stir occasionally while making the grilled cheese sandwiches.When you've started your last pan of sandwiches, turn the soup off and let it start to cool down.

broccoli cheese, baby!!!
ReplyDeleteMacaroni bake is on the menu tonight. Any type of pasta (we happen to have elbow macaroni on hand), shredded mozarella, jar of cheap spaghetti sauce. Cook noodles, add rest of ingredients - stick in oven and bake at 350 for 20 minutes or so.
