Meatless Monday

So here we are again the beginning of another week. I am actually looking forward to this one. Trying to be upbeat and get things done attitude. Finally back to my old self.

I didn't have much time to come up with a meatless meal though. I have a favorite all stored up for emergencies though. Yum, breakfast for dinner is so good. I mean how often do you really get up and make fresh hot pancakes anyways. Most people make buttermilk pancakes, but we never have buttermilk. Our budget is super tight, so we make it a policy to not run to the store really quick for anything. Also, if it will be bad before we use it all we won't buy it either. So I don't make buttermilk pancakes. I use a basic pancake recipe and always double it.

1 C. flour
1 Tbs. sugar
2 tsp baking powder
1 beaten egg
1 C. milk
2 Tbs. cooking oil

Mix all your wet ingredients in one bowl and all your dry in another. Make a well in the center of the dry ingredients and pour in the well mixed wet ingredients. Stir with a fork until just mixed still lumpy.

Make sure your skillet is nice and medium hot (not too hot) put the oil on (it will smoke if the pan is too hot). Then add a 1/4 C. of the mix. You will know to flip the pancake because the edges will start to be a little dry and there will be bubbles on the top of the batter (just about 2 minutes). Then just cook the other side about 1 minute. You'll get nice golden pancakes.

Now nothing is better then real maple syrup and butter on pancakes, but it is dinner so I try to make it a tiny bit healthier. I will take as many fruits as I can and make topping for the pancakes. I like to put a small amount of butter, a couple sliced bananas’, a teaspoon of brown sugar, dash of cinnamon and some chopped pecans in a small skillet and sauté that up. Diced up some fresh strawberries, add a teaspoon of sugar stir and let set for a couple of minutes. Pineapple, is good freshly cut or from a can. You can put it on the side or right on top of the pancakes.

  1. We have had omelets, waffles, and breakfast casseroles for dinner. Never hurts to have breakfast at a different time of the day. We usually do salads on our meatless meal nights, or nachos with tons of fresh salsa and veggies.

  2. We just had pancakes for dinner last night. Eggs don't work for dinner as one dc doesn't like them and the other two like them different ways. Usually when I serve breakfast for dinner, I want something easy & that everyone will eat, so pancakes it is.
