Meatless Monday

Leek and Potato Soup

First you up a little oil in the bottom of your pot. Then you add in a diced onion and a few 3-4 leeks that are thinly sliced. Once they are cooked up nicely perhaps starting to brown a little you add the potato's and spices. I add garlic, salt pepper, red pepper and celery seed. The potatoes should be finely diced so they can cook down faster. Then add vegetable broth or half broth and half water (saves money) to just cover the potato's. You should cook the potato's until they can be easily broken apart with a spoon. It will really depend on how well you diced them. Now would be the time to smash them with a spoon if you want a really creamy soup. Just use the back of a wooden spoon and smash a few against the side of the pot. Then add some cream to taste and warm back up. Make sure you don't burn the cream by stirring often. I like to continue a soft boil for about 5 minutes to just get the tastes married.
