Oh dear Meatless Monday what have you done to me. I recently found myself craving...not meat, not starches, not even chocolate but Veggies Fajita's. I had never even thought or eaten or made veggie fajita's but I had this crazy craving. Nothing was satisfying me until the idea of veggie fajita's came into my mind. Then I had to call my husband at work and make him buy everything on the way home. Then I had to make it as soon as he came in the door, even though it was late and dinner should have been done already.
So in frenzy of craving and rush to get some food in the toddler, I have very little memory of how I created the yumminess of these Veggies Fajita's but I will try to recreate the recipe.
We used whole wheat wraps.
Sour Cream
Salsa
4 bell peppers
1 onion
1 16 oz can rinse black beans
Vegetable Stock
Jalapeno (you could substitute green chillies for a milder flavor)
4 cloves of garlic
shredded cheese
Dice half the onion and cut the other half into rings and cut the rings in half.
Dice up the garlic
Dice up the Jalapeno
Put a drizzle of olive oil,half the onion (diced half), half the garlic and the Jalapeno in a sauce pan.
Saute on medium heat until soft.
Add in the black beans and some stock or broth like half a cup
Let that simmer.
Cut the bell peppers into strips.
Drizzle olive oil into a large skillet
Heat the oil on Medium high.
Throw in the (in this order) onion, bell pepper and then the garlic.
Stir often and until tender
You may want to add in some salt, pepper, and/or fresh oregano
Make sure your bean still have some liquid in them. Smash some against the side of your pot and stir. You want them to be thick and chunky.
Warm up your tortilla's. Serve with salsa, sour cream,and cheese. Oh yummy, I put the beans right on the tortilla top with cheese, pepper and onion mixture, salsa and sour cream in that order.
